Hamlet Act 3

In this act, Polonius dies and Hamlet succeeds in making his mother realize just what she's been doing since King Hamlet died.
A couple of things confuse me though.

In the beginning of the Act, Hamlet refuses Ophelia's love and claims he never loved her. Later, towards the end of the Act, the interaction between Hamlet and Ophelia seems almost friendly and "normal"... Hamlet is acting much nicer to her here than he did in the previous scene with her. What's up with the change of heart? Or mind?

Also, we know that several of Hamlets friends in the beginning of the play were able to see the ghost. But Gertrude can't. Why?
